The layers include beef or lamb, potatoes, onions and carrots. You can also add extra vegetables if you wish, but it’s not necessary for this traditional recipe.
When making your Lancashire hotpot you’ll need to start by pre-cooking any meat that you plan to use – usually either lamb or beef – although some recipes suggest substituting one for the other. Once cooked, set aside until ready for assembly in the slow cooker/ovenproof dish. Next layer on sliced potatoes (any type of potato will do), followed by thinly sliced onions and finally chopped carrots.
Once all of your ingredients are layered into the slow cooker/dish give them a good mix with a spoon before pouring over your stock or water until it just covers the top layer of vegetables and meat – about half an inch should be enough liquid depending on how big your slow cooker/dish is!
