January, 2021The best seasonings for everyone are different, it is not only a matter of taste, but also habits, sometimes folk traditions. Someone only loves salt and pepper, others know all herbs by heart. For example, real pilaf is made with cumin, barberry, and mulled wine - with cinnamon and anise. On a mountain hike, we took khmeli-suneli with us, now this spice reminds me of going out into nature, so I love it very much.

January, 2021As they say, everyone has their own. I can tell you about such spices that are undeservedly little used in our country, despite the fact that they have not been exotic for a long time and are quietly sold in any more or less large settlement.
Asafoetida - usually sold ground, yellowish in color. Originally from India, it is perfect for fish dishes, for pickles, soups and sauces.
Star anise - otherwise called "star anise". It will very well enrich the taste of meat, pork, fish dishes, it is also perfect for duck meat.
Cumin (or cumin) - in the form of seeds or ground seasoning is ideal for dishes in "oriental style ": from legumes, rice (including pilaf), with lamb.
Fenugreek (or Shambhala) - yellow seeds or powder. Since the seasoning is from India, it will go well with all Indian dishes, in particular for curries, but quite ordinary domestic dishes will be infused with a new taste with this seasoning.
This is certainly not all! Personally, I am very tempted to use a mixture of seasonings and spices, so the dishes will get the wrong aroma and new taste. Mixes can be prepared on your own - this is the best option, since you can enhance some component if you wish, and make others "auxiliary", but ready-made mixes on the markets in special departments are also a good option.
