Hmm. I don't even know how to tell you. The vast majority of people from time immemorial eat thermally processed food. And nothing, however healthy, for the most part. So the answer, in the most obvious way, is no, not true. If it was useless, people would die a little from such a diet, wouldn't they? But they live, Herods! In general, it is difficult to overestimate the importance of the discovery of the process of heat treatment of food in the formation of mankind. Seriously, even monkeys do primitive tools. But only we are engaged in food processing. Coincidence? (Spoiler alert: no)

The answer to this question is a little more complicated. But in short: no, not true, in most cases. As I noted above, cooking food is one of the key points that allowed humanity to rise. Why? Because these foods are more nutritious and safer. Safe is understandable - less bacteria and parasites. Botulism is no joke to you, for example. Why more nutritious? Because from heat treatment, many substances in food are broken down into the simplest building blocks. The same thing happens during digestion. But during digestion, we spend the resources of our body on this, and here we give a noticeable share of this process to outsourcing. The net payoff for a piece of meat is about 30%. That is, we get almost a third more energy from the same piece. But that's not all. Fried or boiled meat is much more tender than raw meat. We spend far less energy chewing it. And don't underestimate the energy consumption of chewing. The chewing muscles are some of the most powerful in the body. And if you look at our closest relatives, or at the skulls of our distant ancestors - they had jaws. Many even have special outgrowths on the skull to anchor these chewing muscles. And yes, the better we experience food, the better it is absorbed.

What does all this mean? This means that less processed food is needed. If you need less of it, then our ancestors should have spent less time in search of food, and spend more time on other things. This means that our ancestors could spend more energy to maintain such a voracious organ like the brain.

Okay, the meat is clear. Meat (and fish) is generally quite dangerous to eat raw. But raw foodists are usually vegans. With plant foods, things are a little different, of course. She does not always have such an obvious benefit from heat treatment. But some plants contain toxins, for example. Which decompose during heat treatment. Or potatoes. Potatoes are rich in starch (we won't talk about solanine here). Starch is very rich in energy. But we absorb raw starch poorly. And thermally processed is much better. Therefore, food rich in starch (potatoes, cereals, corn, etc.), heat treatment is also generally beneficial.

And as for the "vitamins" and buzzwords that would-be nutritionists opDo they operate without understanding their meaning and role? Well, yes, many useful (and irreplaceable) substances are of course also destroyed. And even not very useful substances are formed (especially when frying). But then again, it's important not to overuse.

To summarize: Don't divide the world into black and white. Each phenomenon has its own pros and cons. Everything in our life is a series of compromises, there is no magic pill. Heat treatment provides unimaginably more advantages than disadvantages. But home-grown would-be nutritionists, with bulging eyes, having heard about the minuses, throw out the child along with the water. Into the concrete mixer. And pushing her cliffs. Into the mouth of the volcano. It is absolutely necessary to process any meat, otherwise you can get poisoned (poisoned to death, no joke) and get a cloud of terrible parasites (let's not even start this topic). Starchy vegetables and grains should also be processed. But the diet needs to be varied and fresh vegetables and fruits, surprise surprise, no one canceled. Because you will never get everything from one type of natural food at once (all sorts of specialized mixtures, of course, do not count). And energy, all the necessary elements and amino acids, vitamins and trace elements. So yes, steak with salad is much better than either of these separately. And never listen to such home-grown would-be nutritionists, do not follow the diets found on the Internet or in glamorous magazines. Most of them are not only useless, but also wildly harmful and lead to severe metabolic disorders.
