For the last six months I have been fond of calculating the nutritional value of my diet, and for me this question is very interesting. Strongly depends on the ingredients of the salad. If you take the Olivier that was made in my family for the New Year, then here is an approximate recipe (the amount was always by eye, but this, I assure you, will not particularly affect the final nutritional value):

A jar of green peas (270 g)
Boiled sausage Doktorskaya 270 g
Hard-boiled egg 6-7 pcs. (280 g)
Boiled potatoes 200 g
Salted cucumber 270 g
Green onions 50 g
Provencal mayonnaise 100 g

Nutritional value per 100 g:
proteins 6 , 2 g
fats 11.4 g
carbohydrates 4.5 g
calories 146 kcal

Vitamins, micro- and macronutrients are about 75% of the daily value, which is quite good. This is mainly achieved through eggs.

To cover your daily calorie requirements, you will need to eat about 1.2 - 1.5 kg of this salad per day. The proportion of proteins, fats and carbohydrates in this dish is really so-so - fats prevail. You will have a constant lack of carbohydrates, an excess of fat, in particular saturated fatty acids. This is not the healthiest food, but not the most harmful, let's face it. And if you replace sausage with chicken breast, mayonnaise with homemade, increase the proportion of vegetables (replacing pickled cucumbers with fresh ones is also healthier), then the proportion of fat decreases noticeably. However, it will not be possible to compensate for the lack of carbohydrates, alas. We'll have to eat extra bananas)

If you are making a classic Olivier with fatty mayonnaise, then definitely yes. The BJD of classic mayonnaise is about 0.5: 1: 75 in favor of fat. And that's about 700 calories per 100 grams. There is only one conclusion: a folk salad is an extremely harmful food product.
